"All disease begins in the gut." -Hippocrates
So it was with me and for many others now suffering from modern illnesses of uncertain origins. Science is catching up with traditional wisdom, learning that the belly is more important than ever imagined. It is not only the food catcher and digester but home to millions of bacteria that have co-evolved with humans, and key to the health and well-being of your body and mind. Much like the Nebraska prairie portrayed above, which is not just grass and infrequent scrubby trees but a complex ecosystem that has found balance over hundreds and thousands of years. (Yes, I am from Nebraska. Never leaves me.)
Thanks to eating real, nutrient-dense food, my energy and passion are back and I want to share this restorative tradition. Bone broth is soul-nourishing, rich from bones of animals raised on pasture grass, filled with sun and minerals from the earth. Grass fed, pasture raised animals build bones filled with trace nutrients and collagen-packed gelatin. Collagen is a valued commodity in the body, even more so as we age and it is critical, needed for joints and the connective tissue throughout your body. Bone broth is a powerful source of collagen and gelatin, its fragrant warmth ready to lift your spirits and heal your body.
"Create. Contribute. Prosper," with these three words, the Union Kitchen Incubator gave shape to my mission of sharing a healing path, of creating health with good food. I make bone broth because in the summer of 2012 I broke my stomach. I am recovering, thanks to the Specific Carbohydrate Diet, which restricts complex carbohydrates and offers structured guidance to heal the gut. Properly made Bone Broth is an essential healing food. Brainy Belly came into being because it was offered Membership in the Union Kitchen Incubator in Washington, DC. I am so pleased to join this passionate community of creators. Food so rules.
